Green Garlic Potato Soup

If you are looking for something special to serve this St. Patrick's Day, try this creamy wholesome family recipe from Susie Homemaker.

Pork Tenderloin
Ingredients

6-8 medium waxy potatoes
3 garlic cloves
1 leek (2 cups diced)
1 cup water
cup cream or (to desired thickness)
cup vermouth (optional)
salt and pepper to taste



Preparation Instructions

Step 1: Peel 6 -8 medium potatoes and dice the leek.

Step 2: Boil the potatoes until tender, about 20 minues.

Step 3: In a medium sauce pan add your chopped leek, 2 whole cloves of garlic, 1 tbsp olive oil, and a pinch of salt. Simmer on low heat for 6-8 minutes. As an option, add 1/4 cup of extra dry Vermouth and let simmer 2-4 minutes.

Step 4: Once the potatoes are tender, strain and save 1/4 cup of the potato water.

Step 5: Place the potatoes, leek garlic sauce and 1/4 cup of boiled potato water in a blender. Blend until smooth. (Be careful as hot ingredients can expand rapidy in your blender.)

Step 6: On low heat, return your blended soup to your empty pot. Stir in your desidered amount of cream. You may add a touch more water for consistency, if desired.

Step 7: Place in a serving bowl and garnish with crispy bacon, green onion and a drizzle of olive oil.

Yields 4.
